  • Lite & Easy Egg Salad Recipe- I like egg salad and I’m not afraid to admit it. Neither should you.

    I know some of you might cringe at the thought of egg salad, but to me it is divine. And what I love most about it is that it’s one more thing I can make easily in the kitchen. (Hey, I’ll take my successes where I can get them.) Recipe: Add three hard boiled eggs (check out Martha Stewart’s Boiled Egg 101 to boil the perfect egg), one teaspoon low-fat Mayonnaise, a 1/3-1/2 finely chopped green onion (only use green part), and a dash of salt. Pulverize it a few seconds in the mixer (I use the Cuisinart Mini-Prep Plus – it’s small and not intimidating) and, ta-da, it’s done. Even the pickiest eaters, um…Mini-Me, will eat it. It has a very low Mayo content so it’s not goopy (goopy is a major turnoff in my house), which means it’s healthy and easy on the hips. Bon Appetit!
    Kitchen Tip: If you’re anything like me and can’t seem to keep your hands off your Smart Phone while working in the kitchen, but want to keep it clean, cover it with plastic wrap. Also good for playing with your phone when you nails are wet or being crafty with glue.

      CG you are a wealth of information. I myself hate egg salad, even your delicious and lite sounding recipe can’t win me over. But I love the plastic wrap tip! Thanks.

      Love the plastic bag/cell phone tip. Need to remember it when I walk in the morning. I put my water and cell phone in a fanny pack and several times the water has leaked. And, I also like your egg salad recipe. I make mine the same way. (green onions, no white part) :)

      This would be really good on homemade wheat bread…the kind they have at Sweet Lady Jane on Melrose!
