  • Dreamy Guacamole Recipe

    In honor of Cinco de Mayo, I’m sharing my favorite Guacamole recipe. It comes from a charming seaside restaurant in Punta Mita, Mexico, where they prepare it right at your table while you drool. For the best flavor and visual effects, use a Molcajete (can be found at William Sonoma and Crate & Barrel) to make and serve the guacamole. Enjoy with homemade tortilla chips, and a margarita or two. Buen apetito!

     

     

    1 avocado, peel, and remove pit

    1/4 medium tomato, seeded and diced

    two tablespoons chopped white onion

    pinch of salt

    pinch of chopped cilantro

    pinch of diced serrano chiles

    squeeze of lime juice

      I sometimes add fresh, crisp white corn. (an idea from CPK) I steam the corn for a short amount of time, cool it in ice-water, slice it off the core and then add it to the guacamole.

        Maybe I should clarify, slice it off the “husk” instead of core.
